Lentils are one of the earliest crops known to man and has played starring roles from soups, sauces, stews, salads and even (yes ) desserts. Generally, lentils are inexpensive (especially the brown, green and red varieties), very nutritious (high in protein, fiber and iron), adaptable and easy to prepare—making them a smart and healthy choice whatever your cooking skill level.

Lentils have been part of African, Caribbean, and Southern foodways for generations, even if they haven’t always taken center stage. Across the African diaspora, lentils appear in stews, spice forward sauces, and plant based dishes that stretch flavor without stretching the budget. And in the cooking of many cultures today, lentils offer a way to honor tradition while embracing healthier-plant-based selections.

One of the biggest strengths of lentils is their versatility. They absorb spices beautifully, making them a natural fit for the bold, layered flavors using smoked paprika, curry blends, ginger, and peppery heat as well as the milder flavors of parsley, garlic, thyme and spinach. They can lean Southern, Caribbean, Mediterranean, Middle Eastern, or African depending on how you season them. Lentils can replace or complement meat, stretch a pot of soup, or serve as the base for salads, bowls, and hearty entrées and creative desserts!

As one of the most budget friendly proteins available, a one pound bag of brown lentils often costs about two dollars (depending on the store and brand) and when paired with rice, potatoes and vegetables can provide a nutritious meal. For anyone looking to eat well without overspending, lentils are a quiet powerhouse.

They cook quickly, store easily, and pair with common ingredients such as onions, garlic, peppers, tomatoes, and a wide variety of spices. Lentil Soup – serves 4

Ingredients

  • 1 cup dried brown or green lentils, rinsed

  • tablespoon olive oil

  • 1 small onion, diced

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 3 garlic cloves, minced

  • 1 teaspoon smoked paprika

  • 1 teaspoon dried thyme or 3 sprigs fresh thyme

  • 1 teaspoon curry powder (optional but delicious)

  • 1 bay leaf

  • 6 cups vegetable or chicken broth

  • Salt and black pepper to taste

  • Fresh lemon juice or hot sauce to finish

Instructions

1. Heat the oil in a pot over medium heat. Add onion, carrots, and celery; cook until softened. 2. Stir in garlic, smoked paprika, thyme, and curry powder. Cook 1 minute.

3. Add lentils, broth, and bay leaf. Bring to a boil, then reduce to a simmer.

4. Cook 25–30 minutes, until lentils are tender.

5. Season with salt, pepper, and a splash of lemon juice or hot sauce.
